The Ellsworth Locker is family owned and operated by Brian and Kathy Chapa. Brian purchased the business on June 1, 1982. At that time the locker did custom processing of beef, hogs and venison; and only made four types of sausages.
Brian married Kathy in 1984 and have three children; Travis, Tyler and Emily.
Many changes have taken place over the years including: building updates, new coolers and freezers, and also new equipment to accommodate the growing business of custom processing and new sausage products.
Today we make over 115 different types of sausages, including the original four. Several of our products have won state and national "awards".
The Ellsworth Locker is a custom exempt and retail meat processing and sausage making plant, licensed with the state of Minnesota.
We offer beef sides and quarters. We also have whole or half hogs available.
